Restaurants in Rosarito have been actively preparing for Tianguis Turístico 2025 with a series of ongoing training sessions, ranging from customer service to the most recent course on hygienic food handling.
Octavio Machado, local president of CANIRAC (National Chamber of the Restaurant and Seasoned Food Industry), reported that the organization, in coordination with COTUCO (Tourism and Convention Committee), is organizing a destination showcase to highlight the region’s culinary and tourism offerings at this major event, which will attract international visitors.
As part of these initiatives, participating Rosarito restaurants will feature a special badge or designation, ensuring that Tianguis visitors enjoy a high-quality dining experience. A new gastronomic guide will also be launched to position Rosarito as a premier culinary destination.
Machado noted that the most recent training session focused on reinforcing best practices in the food industry, with over 70 restaurant workers participating. The workshop was delivered by the State Commission for Protection Against Sanitary Risks (COEPRIS) and emphasized hygienic food handling.
Key topics covered included proper ingredient storage, cleaning and disinfecting of utensils and work areas, and temperature control—all essential measures for ensuring food safety. These efforts aim to elevate the quality and safety of the dishes served to diners, further strengthening trust in Rosarito’s local gastronomy.
“This training reinforces good hygiene and safety practices in food preparation, guaranteeing a better experience for our guests and promoting excellence in Rosarito’s culinary scene,” Machado emphasized.
